Mid-Summer Buffet(served room-temperature)

Wild Field Greens

tossed with sliced ripe strawberries, toasted almonds, cherry tomatoes and seedless cucumber-drizzled with raspberry vinaigrette


Wild Rice & Orzo Salad

wild rice and orzo pasta tossed with sun-dried cranberries, chopped pistachios, scallion, bell pepper and citrus essence with citrus vinaigrette


Artisan Breads & Rolls

linen lined baskets of assorted fresh baked breads and rolls with

 butter chips to the side


Grilled Chicken Breasts

rubbed with olive oil and fresh rosemary then flame grilled

and sliced on the bias


North Atlantic Salmon Fillets

flame grilled and topped with mango-papaya salsa

a boneless skinless breast stuffed with wild rice, sundried cranberries and cherries, scallion and carrot-baked and napped with

 a sun-dried cranberry merlot sauce

fork tender brisket slow smoked and served in natural juices

Pasta Puttanesca

farfalle with sauteed eggplant, squash, bell pepper, kalamata olives and capers in a zesty burnt tomato sauce with a fresh basil chiffonade


Penne Marinara

penne tossed in homemade marinara with a dusting of grated parmesan cheese


Pasta Primavera

farfalle tossed with Autumn vegetables in an olive oil and tomato sauce



Station 2


Roasted New York Strip

hand carved at the station by a uniformed chef and offered with a red wine reduction and whipped horesradish sauce


Grilled Rosemary Chicken Breast

boneless skinless breasts rubbed with fresh herbs and char grilled then cut on the bias and served with a natural rosemary chicken jus


Mashed Potatoes

gold potatoes hand peeled and mashed with heavy cream, butter, kosher salt and white pepper-  be sure to ask about toppings to create your own

mashed potato bar!



Fresh Green Beans

hand trimmed and tossed with caramelized shallots and red bell pepper
